The Kentucky Derby is more than a famous horse race; it's also a really big party. Each year on race day (the first Saturday in May), around 150,000 people gather at Churchill Downs and in between admiring each other's hats and placing bets, they do what they would at any good party-they eat and drink. When it comes to drinks, the Mint Julep is king. Levy Restaurants, the group that caters the Derby, estimates they'll go through 475,000 pounds of shaved ice, 2,250 pounds of mint, and 7,800 liters of bourbon. Talk about a hangover!

In the Q that follows, Doyle discusses his Derby experience, the dishes on this year's menu, and the use of local ingredients.
Epicurious: What's it like to cater the Kentucky Derby?
Chef Doyle: This is my fourth Kentucky Derby and my second as the executive chef. It's an unbelievable feeling be a part of such a legendary event. You know how they say the Derby is one of those events that should be on your bucket list? Well, it's absolutely true; I still can't believe I actually work here.
It's an honor to work with the Churchill Downs team to create and deliver such an incredible experience for the fans that attend. It's both overwhelming and thrilling to think that I'm responsible for feeding all of these people and ensuring that they have a memorable day with us.
